The Crock-Pot, kids and dinner

Crock-Pot dinnersYou’d be hard-pressed to find a two-year-old who’s mastered the art of
patience — my kids (two years and nine months) are no exception. Add
to that the fact that I’m a working mom who skids in the door at 5:39 every
night, and it’s easy to see why dinnertime at my house is a scene of flying
forks, sippy cups and–occasionally–food. Really, loads of fun. You should
come over sometime. OK, so it’s not a sincere invitation, but I’ve found
that inviting people over for dinner is one way to make my life–or at least
dinner–easier.

In fact, for the last six months, I’ve had my friend Shannon and her family
over to dinner every other Thursday. In return she feeds my family on the
odd week. It’s a great set up because our kids are similar ages and love to
play together, but mainly because every other week I get a break from my own crazed kitchen.

Surprisingly, it’s no more difficult to make dinner for eight than it is for
four. In fact, I’ve found a wealth of recipes that make it even easier on
crockpot.com. Tonight, Shannon’s bringing her crew over and we’re having
40-clove chicken. It’s at home cooking in my crockpot right now. All I have
to do is walk in and serve it up, then Shannon will help me with the dishes!
